Big Soft Ginger Cookies

Ingredients

  • 280g all-purpose flour

  • 4g ground ginger

  • 4g baking soda (previously 5g)

  • 4g ground cinnamon (previously 4g)

  • 1.5g ground cloves (previously 1g)

  • 2g salt

  • 165g margarine (or 120g crisco + 15g water)

  • 200g white sugar

  • 1 egg

  • 15ml water

  • 60ml (80g) molasses

  • 25g white sugar

Directions

  • Preheat oven to 350F (175C)

  • Sift together flour, ginger, baking soda, cinnamon, cloves and salt, set aside

  • Cream together margarine and sugar until light and fluffy

  • Beat in one egg then stir in water and molasses

  • Gradually stir the sifted ingredients into the molasses mixture

  • Shape dough into walnut sized balls and roll them in the remaining sugar

  • Place on cookie sheet 2 inches apart and flatten slightly

  • Bake for 8-10 minutes or longer until lightly cracked on top

  • Allow to cool completely on wire rack
