Big Soft Ginger Cookies

Ingredients
280g all-purpose flour
4g ground ginger
4g baking soda (previously 5g)
4g ground cinnamon (previously 4g)
1.5g ground cloves (previously 1g)
2g salt
165g margarine (or 120g crisco + 15g water)
200g white sugar
1 egg
15ml water
60ml (80g) molasses
25g white sugar
Directions
Preheat oven to 350F (175C)
Sift together flour, ginger, baking soda, cinnamon, cloves and salt, set aside
Cream together margarine and sugar until light and fluffy
Beat in one egg then stir in water and molasses
Gradually stir the sifted ingredients into the molasses mixture
Shape dough into walnut sized balls and roll them in the remaining sugar
Place on cookie sheet 2 inches apart and flatten slightly
Bake for 8-10 minutes or longer until lightly cracked on top
Allow to cool completely on wire rack
